Creamy Banana Bread / (cream cheese banana bread) / My Sweet Zepol #recipe

My kitchen, like many of the kitchens I’ve been to, have fruits on the counter and bananas are part of those fruits. Haven’t you had 3 or so untouched bananas that no one seem to want to eat? Maybe because they have brown spots or are a little soft to the touch. That happens way to often in my house and that leads to me baking banana bread or banana muffins.

The smell of the banana bread while baking in the oven is intoxicating, you just wish for it to be done and cut into it for a big bite. I bake many banana cakes, banana breads, banana muffins and even banana cupcakes. Thankfully I always find a good friend that wants to take home some of my baked goodies. If not, my family could easily weight 1,000 pounds each, hahaha…

Now, here is the recipe for you to enjoy as well:

Creamy Banana Bread

{Cream Cheese Banana Bread}

Ingredients:

3/4 cup butter, softened
8 ounces cream cheese, softened
2 cups sugar
2 large eggs
3 cups all-purpose flour
1/2 teaspoon baking powder

1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups mashed bananas (about 4 medium)
1 cup chopped pecans (or walnuts)
1/2 teaspoon vanilla extract

Directions:

Preheat oven at 350 degrees and grease your pan of choice.

Cream butter and cream cheese at medium speed until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating after each addition. Add in the bananas and vanilla, mixing until combined.

In a separate medium bowl combine the flour, baking powder, baking soda and salt. Gradually add the dry ingredients to the mixture, don’t over mix. Finally stir in the pecans (or walnuts).

Bake for 30-40 minutes or until a toothpick inserted in center comes out clean and the sides pull away from the pan. Cool bread in pan on wire racks for about 10 minutes. Remove from pans, and cool completely before slicing.
