Pumpkin Spice Granola {with dark chocolate}

The best way to describe granola is with one word: “versatile”. Once you try making them at home you just have to keep on experimenting with it. You can add just about any nuts and dry fruits you love. In our house, we all love granola with vanilla yogurt.

During one of Food Blogger Bake Sale I purchased Katie’s Blueberry Granola and it was amazing. Then Aggie posted about her Golden Granola and motivated me even more to try it out! This two awesome food bloggers inspired me to give it a try and make some home made granola for us to enjoy as a family.

I guess it’s fare to say that both of this gals had an impact in the granola I made. I added some dry fruit, inspired by Katie and used some Coconut oil, inspired by Aggie! I pretty much went with both recipes and made my version!

Pumpkin Spice Granola

(with dark chocolate)

Ingredients

1 cup Honey

3 tablespoon Coconut Oil (can be substitute with Canola Oil)

1 teaspoon Vanilla

2 cups Old-Fashion Oats

1/2 cup Pecans

1/2 cup Sunflower Seeds (I used salted sunflower seeds)

1/2 cup Slivered Almonds

1/2 cup Dry Cranberry

2 teaspoon Pumpkin Spice

1 cup Dark Chocolate

Directions

Preheat the oven at 325 degrees

Grease a baking sheet and set aside.

Simmer at low heat the honey and coconut oil, (stirring constantly) once it has simmered turn off the heat and add vanilla. Set aside.

Mix the oats, nuts and pumpkin spice in a large bowl. Then add the honey mixture and coat evenly.

Spread the granola evenly in a large baking sheet.

Bake for about 20 minutes or until golden brown. Half way the baking time (about 10 minutes) add the dry fruit.

Remove from oven and let cool completely.

Once cool add the dark chocolate and mix well.

Granola keeps for up to 3 weeks, (if it lasts that long) in an air tight container.

Hope you all try and love this recipe as much as we do! It has that pumpkin spice taste (great for fall season, but definitely good on any given day), crunchiness of the oats and nuts, some sweet to bitterness taste given by the dry fruit and the sweetness of the dark chocolate. This Pumpkin Spice Granola is a hit in our house, try it out and let me know the results.

    Yay for homemade granola!! It’s addictive isn’t it? I love that you added dark chocolate to this, yum can’t wait to try it!

      Aggie, thanks for stopping by; it’s an honor. Dark chocolate has always been my favorite, specially when it comes to cravings. Granola is a great treat to fill you up in between meals, and you can customize it with your favorite ingredients. Awesome, right? I love recipes like that.

      @Robin, can’t wait to see what you come up with. Once you try it for the first time you get hooked with it and how simple it is to make. It’s also a perfect snack for in-between meals.
