Easter time brings so many beautiful memories to mind. I grew up in Boston and during Easter Sunday my family went to church in the morning. We would meet with family; aunts, uncles and cousins. After church everyone gathered in my parents home. My mom and aunt would cook while the kids watched cartoons. Can you relate to this setting?
The stories told, (most of which were repeated stories – year after year) the laughter, the music and food is as vivid to mind as if it was yesterday. Lovely memories that always bring a smile in my face. I loved those days and do my best to keep them alive in my home with the family we have near by and some added friends that feel like family.
When I was a kid we made homemade popcorn. We, means me. At that time we didn’t own a microwave, so the popcorn was made on the stove. I still, from time to time, make popcorn on a large pot on the stove top. This recipe is with popcorn made the old school way. You can still use a microwave if you wish, but I encourage you to try it at least once on the stove top and find out for yourself how easy it is.
Sweet and Salty Caramel Popcorn
Total Time: 1hr + 5 min
Sea Salt Caramel homemade Popcorn is the best sweet and salty treat to enjoy any weekend, specially Easter Sunday.
2 tablespoons clear Oil
1/2 cup Popcorn (un-popped)
2/3 cups Brown Sugar
1/2 stick Butter
3 tablespoons Corn Syrup
1/2 teaspoon Vanilla extract
1/2 teaspoon Baking Soda
1/2 teaspoon Sea Salt
Heat oven to 200 degrees.
In a large pot with lid add the oil, medium heat.
Toss in the popcorn.
As soon as the first corn pops put the lid on and let it pop on.
When it stops popping remove from the heat and set aside.
In the meantime, in a pot bring the sugar, butter and corn syrup to a broil and then simmer down a bit. This should take about 3-4 minutes.
At this point add the vanilla extract and the baking soda
Remove from the heat and toss into the popcorn making sure every single popcorn is covered with the caramel sauce.
Prep a baking sheet with parchment paper and transfer the caramel popcorn spreading it evenly.
At this point drizzle sea salt over the caramel popcorn.
Bake for 1 hour.
Toss about every 20 minutes.
Remove from the oven and enjoy!
