Biscuits are one of our favorite brunch items. They can be sweet, savory, have a glaze over, a chocolate drizzle, a sprinkle of herbs or just about anything you want them to have.
This biscuits have a sweetness and tanginess taste and I love that combination of flavors. They work wonders during the holidays. Cover them with a vanilla bean glaze and enjoy with a nice cup of coffee or hot cocoa. Brunch for the win!
Raspberry Vanilla Bean Biscuits
Raspberry vanilla bean biscuits are the perfect not-too-sweet addition to any brunch. Sweet + Tangy = Heavenly. And the best thing is that they are super easy to make.
Heat oven to 350 degrees.
Line a large baking sheet with parchment paper. Set aside.
Combine flour, baking powder, salt and 1/3 cup sugar in a medium size mixing bowl. Stir with a fork to combine. Note: Don't over-mix.
Cut the butter into cubes.
Using a fork mix the butter into the dry ingredients. It should have a pea sized look.
Add the cream and stir until a loose dough forms.
Gently fold in the fresh raspberries.
Use a medium scoop to portion 12 mounts of dough onto the lined baking sheet.
Sprinkle with the sugar over each biscuit and bake for 20 minutes.
Remove from the oven and let it cool on a wire rack.
Vanilla Bean Glaze
While the biscuits cool off start making the vanilla bean glaze.
Mix the milk and the vanilla paste into the powder sugar.
Once biscuits are cool drizzle some of the glaze over each biscuit and let it set.
Get your favorite drink and enjoy a freshly baked raspberry vanilla bean biscuit.
Everyone in the house loved the raspberries and agree that we should try them with other fruits once they are in season. I can see some strawberry, and peach biscuits making an appearance in our brunches sometime soon. So, wait for them!
