Fall is all about being outdoors. Windy days with a crisp fresh air, different shades of colors on the leaves, and families enjoying the long beautiful afternoons. This is a beautiful time of the year indeed. Not too hot, not too cold. Just perfect.
With pumpkins showing up just about everywhere and the smell of nutty granola in my kitchen I couldn’t resist on making a trail mix to snack on while enjoying our days outdoors. Here is the recipe, there’s no reason why you can’t have some harvest trail mix too.

Granola is that snack I go to over and over again. Is super easy to make, can be made into large batches and can be used in a wide variety of recipes. Add some granola to yogurt and enjoy a very good for you breakfast, add to your salad and have a healthy lunch, add to some fruits and vanilla ice cream and you won’t regret having dessert. Can you see why I love granola? Versatile doesn’t do it justice.

September is Hispanic Heritage Month and I haven’t stopped thinking about all the wonderful family moments and mom’s dishes. I miss her cooking. She lives in the center of Puerto Rico, an area well known for its coffee. Most of my family either worked in coffee fields or growing some sort of produce. She enjoyed making all kinds of dishes using coffee and a key, (or secret) ingredient. One dish she made and I tweaked a little is a morning french toast casserole. My version includes instant coffee, coffee creamer, chocolate chips, and some crunchy pecans. Making it the perfect cafe con leche french toast casserole. Sounds just about perfect, don’t you think?
