Instructions
  1. Heat oven to 325 degrees.
  2. Spray an 8 or 9 inch square pan with cooking spray or prep with parchment paper.
Crust
  1. Using a food processor, place graham crackers, sugar, and lemon peel.
  2. Process with on and off pulses until crumbs form.
  3. Add melted butter.
  4. Cover and process until incorporated, about 3 to 4 pulses.
  5. Press mixture evenly in bottom of the pan.
  6. Bake for 10 minutes.
  7. Set aside to cool.
  8. While the crust is in the oven and then cooling off, start working on the filling.
Filling
  1. Use the food processor or a hand or stand mixer.
  2. Add cream cheese and sugar.
  3. Beat until creamy.
  4. Add the eggs, one at a time. Beat until well combined.
  5. At this point add in the lemon peel and fresh lemon juice.
  6. Pour cheesecake mixture over the cool crust.
  7. Top with the blueberries.
Streusel Topping
  1. In a medium bowl, mix topping ingredients with a fork until crumbly.
  2. Sprinkle over the filling.
  3. Bake for 35-40 minutes or until topping is lightly brown and center is almost set. Note: Center should jiggle only slightly when moved.
  4. Cool for 1 hour on a cooking rack.
  5. Refrigerate about 2 hours or until chilled.
  6. Cut into squares. Tip: 3 rows by 3 rows.
  7. Store in refrigerator.
  8. Enjoy!
