Pavlova Parfaits
To make the compote
  1. Add all ingredients to a saucepan over medium heat.
  1. Bring to a boil and then reduce the heat.
  2. Simmer for about 20 minutes or until the mixture thickens.
  3. Remove from the heat and let cool.
  4. Can it by following the canning tips in this post.
  5. Preserve for about one year.
For the Pavlova Parfaits
  1. Fold meringue cookies into cool whip, set aside.
  2. In a glass of your choice, layer whipped combination followed by the strawberry compote and roasted pistachios.
  3. Add one or two more layers. Note, I usually do two layers, you get to choose how many you want to have.
  4. Serve immediately and enjoy!
