When my dear friend Robin from Simply Southern Baking approached me with the idea of making a Virtual Potluck for a special lady I immediately jumped in. I had not met this lady or read her blog until that day, but when I did…I was heartbroken, humble, inspired and had an extremely admiration for her strength and faith. God is good at all times and she has a special way of showing us God through her personality, her blog posts, her voice and her charm. She is definitely a charming southerner that I have come to love. Her name is Christy Jordan and she is the voice behind Southern Plate. If you haven’t been to her site, please do so, you are up for a treat. She’s an amazing lady, indeed!

Let me say a little about her story and why we are making this virtual potluck in her honor. She is a wife, mamma of two darling kids, a Southerner at heart and a follower of Christ. During the summer she had an accident while horseback ridding and injured both her legs, badly. You can read her story on her “100 Reasons Why I’m Not A Cowgirl” journal. Her spirit is so lifted up and she is so radiant on her videos and posts that you will be inspired by her in many ways. I know I am!

We wanted to do something special for her and since we all live around the USA and can’t just go on and knock at her door with a nice plate of brownies, (I am a sweet junkie, so sweets will be what you can expect from me), a virtual potluck is about the closest we can get to sharing with her easy to make dishes that she can try at home and feel the love that goes along the plate.

I have chosen to make a Mint Chocolate Espresso Pudding, because it’s not only super easy to make, but it’s delicious. I love the combination of chocolate and coffee and my husband (and girls) are big fans of mint with chocolate that I thought this recipe was perfect to share with a new addition to our family, Christy.

Mint Chocolate Espresso Pudding

(recipe from Wanda – My Sweet Zepol)

Ingredients

1/2 cup Milk

2 tablespoons Sugar

1/4 teaspoon Espresso (instant espresso)

1/2 cup Semi-Sweet Chocolate Chips

1/2 cup Mint Chocolate Chips

3 Egg Whites

Directions

Simmer milk, sugar and espresso in a saucer or small pot.

In a blender add the chocolate with the milk mixture (still hot) and the egg whites.

Mix well and pour on small glasses (for several servings).

Refrigerate for about 2 hours.

Garnish with some whipped cream and mint leaves or whipped cream and shaved chocolate.

My prayers for Christy and her family is to keep on believing that God can do anything He wants in a blink of an eye. That when He has us passing through rough times (like this one for them), there is always a lesson to be learned and a perfect plan. I have been a Cancer patient for years with a rare type that don’t really have a cure, but I am so joyful and grateful to my Lord for each and everyday. Because that means that I have life to spend with my girls and husband, words can’t begin to describe the blessing that is for me (us).

My daily devotions always start or end with a BIG thank you to my father in heavens for the everyday blessings and the opportunity that He has given me to introduce Him to others just by sharing my testimony. Which has nothing to do with me, it’s all about Him.

Let me just say that it has passed the test! This chocolate pudding with a touch of mint is the perfect ending treat after a meal. It’s light, refreshing and delicious. Enjoy!
