Berries Vanilla Pies
Berries vanilla pies are best when topped with an ice cream scoop! Summer taste in each bite! Creamy, crunchy and tangy filled with berries.

  1. Heat oven to 350 degrees.
  2. Place the berries, cornstarch, sugar and vanilla paste in a small bowl and mix to combine. Set aside.
  3. Cut out 6x11cm rounds from the pastry and use to line the bases of a lightly greased 1/2 cup capacity (6 hole muffin tin).
  4. Divide the filling between the pastry cases.
  5. Cut strips from the remaining pastry.
  6. Brush the edges of the larger pastry rounds with egg and layer the strips crossing them across one another. Press the edges together to seal.
  7. Brush the tops with egg and sprinkle with raw sugar.
  8. Bake for 25-30 minutes or until golden brown and pastry is cooked through.
  9. Serve with ice cream and enjoy!
