Brownie Cookies
  1. Heat oven to 350 degrees.
  1. Place 1 cup + 1/8 cup of the chocolate and the butter in a small saucepan over low heat and stir until melted and smooth. Set aside.
  2. Place the eggs, sugar, and vanilla in the bowl of an electric mixer and whisk until pale and creamy.
  3. Stir through the flour, baking powder, chocolate mixture, and remaining chocolate. Allow to stand for 10 minutes.
  4. Scoop tablespoonfuls of the mixture onto baking trays lined with non-stick baking paper.
  5. Bake for 8-10 minutes or until puffed and cracked. Allow to cool completely on trays.
Mascarpone Frosting
  1. Beat mascarpone and sugar until smooth.
  2. Add cream and beat until firm.
  3. Spread half the cookies with the mascarpone frosting and sandwich with the remaining cookies.
  4. Enjoy!
