Chicken Pot Pie
Chicken Pot Pie is one of those pies that everyone loves to take a bite into. Savory, meaty, creamy and absolutely delicious. Note: This recipe is enough for 2 pies. Make half the recipe if you wish to make just one pie at a time!

Instructions
  1. Heat oven to 400 degrees.
  2. Saute onion, celery, carrots and potatoes in margarine for 10 minutes. Stir in salt and pepper.
  3. Add flour to sauteed mixture, stirring well, cook one minute stirring constantly.
  4. Combine broth and half and half.
  5. Gradually stir into vegetable mixture.
  6. Cook over medium heat stirring constantly until thickened and bubbly.
  7. Add chicken and stir well.
  8. This is enough for 2 pies, can you believe that? You can bake one and save the other for another day or share it with a loved one. Pour into 2 pie pans over a layer of pie dough then top with another piece of pie dough.
  9. Make an egg wash (which is nothing more than a beaten egg) and cover the pie crust with it. This will give your pie a beautiful golden shine.
  10. Cut slits to allow steam to escape.
  11. Bake for 60 minutes or until pastry is golden brown and filling is bubbly and cooked through.
