  1. Heat oven to 350 degrees.
  2. Lightly grease 12 capacity muffin tins with oil.
  3. Cut the pastry into 9 equal pieces and press into the prepared tins. Set aside.
  4. To make the filling, heat the oil in a large, non-stick frying pan over medium heat.
  5. Cook the sausage link into small pieces for about 2-3 minutes until it's no longer pink. Remove from the pan and place on a plate with paper towels to drain any liquid.
  6. Add chorizo and cook for 2 minutes, keeping an eye on it so it wont burn on you. Set aside to drain on a paper towel.
  7. Place the eggs, cream, milk, parmesan, salt, and pepper in a medium bowl and whisk to combine.
  8. Spoon ricotta and caramelized onion inside the pastry cups. Top with chorizo and sausage. Divide evenly into the 18 muffin tins.
  9. Pour over the egg mixture and bake for 35-40 minutes or until cooked through.
