Pumpkin Spice Cake
  1. Heat oven to 350°.
  2. Whisk together dry ingredients (the first 8 ingredients).
  3. In another bowl, beat pumpkin, sugar and oil until smooth; add eggs, one at a time, beating well after each addition.
  4. Gradually add flour mixture; beat until well blended.
  5. Line a 9-in. square baking pan with parchment; grease paper. Pour in batter.
  6. Bake for 15-20 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack. Remove from pan; cool completely on wire rack.
Cream Cheese Filling
  1. For filling, beat cream cheese, butter and vanilla until blended. Gradually beat in confectioners’ sugar until smooth.
Assembling
  1. To assemble, cut cake into 1/2-in. cubes.
  2. Assemble 8 glasses or small parfait jars. Alternate layers of cake and filling, ending with filling. If desired, scoop some whipped cream, pepitas and ground pumpkin spice.
