Pistachios Toffee Shortbread Bars

Instructions
  1. Heat oven to 275 degrees.
  2. In a bowl of a stand mixer combine flour, sugar, butter, vanilla and egg yolk. Beat until well combined. Scraping down the sides as needed.
  3. Place the dough in a 14x4.5in tart baking pan. I love this size and it makes cutting into bars so much easier. Note: You can double the recipe and bake on a 15x10 baking sheet.
  4. In a small bowl, beat the egg white and brush the top of the dough.
  5. Toss in the toffee. Arrange evenly.
  6. Now, toss in the chopped pistachios. Arrange evenly.
  7. Bake for 40 minutes, or until golden.
  8. Once baked, remove from the oven. Cut before it cools off.
  9. Cut into 8 equal bars.
  10. Enjoy!
