I love easy recipes. Life is busy and I am all about keeping things as simple as possible. Delicious food is a must. I am always finding a ways to enjoy scrumptious food to eat, yet simple to make. That is where this compote recipe comes into play. It is super easy to make and will have your guests, family and friends thinking you spent hours in the kitchen. A great way to preserve those delicious sweet red gems you found in your local market or at a U-Pick farm. Yes, I am talking about strawberries! They are in season right now in Florida and I will be teaching you a great way to preserve your favorite fruit. Enjoy them all year long until next season. Let’s get started!

Strawberry Compote Pavlova Parfaits

Yield: 4 servings

Light and airy dessert made with fresh ingredients. Perfect year round thanks to the strawberry compote.

Ingredients

Strawberry Compote

  • 3 cups Strawberries, used Florida Strawberries

  • 1 tablespoon Sugar
  • 1 zest Lemon
  • 1/2 juice Lemon
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Chili Powder
  • a pinch Salt

Pavlova Parfaits

  • 8 oz Cool Whip
  • 3 oz Crisp Vanilla Meringue Cookies, chopped into 1/2 inch chunks
  • 1/3 cup Roasted Pistachios
  • Strawbeerry Compote, (see recipe above)

Instructions

To make the compote

  1. Bring to a boil and then reduce the heat.
  2. Simmer for about 20 minutes or until the mixture thickens.
  3. Remove from the heat and let cool.
  4. Can it by following the canning tips in this post.
  5. Preserve for about one year.

For the Pavlova Parfaits

  1. In a glass of your choice, layer whipped combination followed by the strawberry compote and roasted pistachios.
  2. Add one or two more layers. Note, I usually do two layers, you get to choose how many you want to have.
  3. Serve immediately and enjoy!
Compote is French for mixture. Feeling international already? Me too! Wee-Wee! A compote is made of whole or pieces of fruit in sugar syrup and spices. The compote can be served warm or cold. You can enjoy your strawberry compote over vanilla ice cream, over pound cake, with homemade buttermilk biscuits, or you can make this strawberry compote pavlova parfait recipe. You want to have a great canning experience and be successful at the end of the process. A year from now you want to know that your strawberry compote is good to eat. That’s why I collected a few canning tips you will want to keep in mind and follow.

Canning Tips:

  • Make this Strawberry Compote recipe.
  • Sterilize the jars: collect and organize all utensils and ingredients. Fill the pot with water and boil.  Place lids into a bowl of very warm water.
  • Place all the bands and jars inside the rack.  Then place the rack inside the pot.  Boil in hot water until you are ready to fill (for at least 10 minutes).
  • Carefully remove the jars and fill each with the recipe, leaving a little space at the top (about 1”).
  • Clean rim of jar and lid, and place lid tightly on jar.  Make sure the seal is tight before adding the band.
  • Place filled jars in rack and then back in the pot.  The water should cover the jars.
  • Place lid on pot and bring to a boil.
  • Allow jars to sit in boiling water for an additional 5 minutes.
  • Turn off heat, carefully remove jars and set upright on a towel in a cool, dry place for 24 hours.
  • Store jars in a cool, dry, dark place for up to 1 year.

Final tip: After 12-24 hours, check the seal on each jar. If any jar does not seal properly (if the top has a bump), do not eat the contents!

Helpful U-Pick Tips!

  • Dress comfortably. Wear loose fitting clothing.
  • Wear a hat or cap and bring sunscreen.
  • Bring your own containers.
  • If you plan to spend the day, take ice to keep berries cool.
  • Select only firm ripe berries.
  • Be careful not to remove the tops of the berries.
  • Make an effort to pick every ripe berry on each plant rather than jumping from plant to plant and row to row.

The growers will appreciate your consideration and you will reduce the amount of strawberries that are left sitting in the field.
