Arts for teens and tweens while homeschooling

No one wants to be bored while staying home safe, try these arts for teens and tweens. They are great to do while homeschooling. Adults loves them too, I know I do!

If your kids are like mine they are bored by now and being very vocal about it. I want to share some arts for teens and tweens to do while homeschooling. One of the girls made the discovery and they are in love with all the designs to choose from. It takes us to places we are dreaming on visiting soon, once everything goes back to normal. Because we are praying for “normal” to come back soon. Witches Midnight Puppy Chow

Who doesn’t love a good puppy chow? We made our very own Halloween inspired Witches Midnight Puppy Chow and everyone we know got a serving to enjoy. Who knew you could make cups of puppy chow and it was so easy to make too? All we have to say is that you’ll love this recipe and it’s great to snack on. This post and recipe was created for #HalloweenTreatsWeek! I was sent samples by some of the sponsor companies but as always opinions are 100% mine.

Mix the cereal of your choice, add chocolate, peanut butter, and your favorite candies to the recipe. Think candy corn and themed sprinkles.

Witches Midnight Puppy Chow

Yield: 5

Spooky treats include our Witches Midnight Puppy Chow. Sweet, chocolaty with a hint of peanut butter and lots of candy corn. Perfect Halloween treat!

Ingredients

  • 3 cups Chex Cereal
  • 2 cups Count Dracula Cereal, with marshmallows
  • 1/4 (1/2 stick) Butter, unsalted
  • 1/2 cup Spreadable Chocolate
  • 1/4 cup Peanut Butter, smooth
  • 1/2 teaspoon Vanilla Extract
  • 1 cup Powdered Sugar, (we use Dixie Crystals)
  • Candy Corn
  • Halloween Sprinkles, (we use Sweets and Treats)

Instructions

  1. Place the Check and Count Dracula cereals into a large bowl. Set aside.
  2. In a small saucepan combine the butter, chocolate and peanut butter and cook over low heat. Cook until the butter is melted and combined with the chocolate and peanut butter. Stir frequently.
  3. Remove from the heat and stir in the vanilla extract.
  4. Pour the butter and chocolate mixture over the cereals. Stir well to combine and thoroughly coat.
  5. Place into a large plastic zip-lock bag. Add the powdered sugar. Shake until the powdered sugar has coated the cereal mixture. Tip: the perfect job for kids!
  6. Line two rimmed baking sheets with parchment paper. Place the puppy chow on the baking sheets. Be sure to keep the mixture to one even layer to ensure even drying.
  7. Add the Halloween sprinkles, and candy corn.
  8. Let the puppy chow dry for about 4-6 hours. Once dry store in an airtight container up to 1 week.

When your kids get home with the overload of candies source them out and make this puppy chow. Add in the candies of your choice. Gummies or chocolate coated candies; even the hard candies if you like to snack on them. Make your own Witches Midnight Puppy Chow and share with us. Ghostly Pumpkin Custards

When it comes to desserts for special occasions our go to is usually those that can be made and served individually. Perfect for entertaining large or small gatherings. Ghostly pumpkin custards are creamy and have the best warm scent like what Fall should be like. This post and recipe was created for #HalloweenTreatsWeek! I was sent samples by some of the sponsor companies but as always opinions are 100% mine.

Who said you can’t make a dessert or treat for Halloween that’s the cutest spooky treat you’ll ever seen? We love the way there ghostly pumpkin custards turned out. Make them at home and tell me how they turned out!

Ghostly Pumpkin Custards

Yield: 8
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

Not-so-spooky ghostly pumpkin custards appear for dessert and don't last long. These ghosts will be gobbled up in no time! Everyone will want seconds!

Ingredients

  • 1 can Pumpkin, canned
  • 1 (12 ounces) Evaporated Milk
  • 1/3 cup Sugar, (we used Dixie Crystals)
  • 2 tablespoons Honey
  • 1 teaspoon Ground Cinnamon
  • 3/4 teaspoon Ground Allspice
  • 2 large Eggs
  • 2 cups Cool Whipped Topping
  • Miniature Semisweet Chocolate Chips

Instructions

  1. In a bowl, combine the first seven ingredients; beat on low until smooth.
  2. Place eight ungreased 4 oz. custard cups in two 8 inch square baking pans.
  3. Fill each cup with 1/2 cup pumpkin mixture.
  4. Pour hot water around cups into the pans to a depth of 1 inch.
  5. Bake at 325 degrees for 40-50 minutes or until a knife inserted in the center comes out clean.
  6. Remove from pans to cool on wire racks.
  7. Before serving, top each with dollops of whipped topping in the shape of a ghost; add chocolate chips for eyes.

We topped these pumpkin custards with piped cool whip and added mini chocolate chips making them the cutest ghosts you’d ever seen. Extra creamy is the way to go.

Spiced Chocolate Monster Truffles

Spiced Chocolate Monster Truffles are sweet, with a hint of pumpkin and melts in your mouth perfectly. You will want to make them over and over. WARNING, they are super addictive. Yes, that good. This post and recipe was created for #HalloweenTreatsWeek! I was sent samples by some of the sponsor companies but as always opinions are 100% mine.

Make these truffles for any event or potluck. They can easily be made the night before or even a couple of nights before and travels nicely. Think party favors. Chocolate truffles are great party favors, who doesn’t love to go home with something sweet? I know we do! We’ll walk you through the chocolate truffle making process.

Spiced Chocolate Monster Truffles

Yield: 24
Prep Time: 45 minutes
Cook Time: 5 minutes
Total Time: 50 minutes

Spiced Chocolate Monster Truffles are loved by grownups and kids alike. Easy to make and better to eat! Make a batch and let them melt in your mouth.

Ingredients

  • 12 ounces Milk Chocolate Baking Bars, divided
  • 1/2 cup Heavy Whipping Cream
  • 2 tablespoons Pumpkin, canned
  • 2 tablespoons Pumpkin, canned
  • 1/4 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Nutmeg
  • Ground Cloves, dash
  • Baking Cocoa
  • Candy Eyeballs, (from Wilton)
  • cupcake liners, (optional, from Sweet and Treats)

Instructions

  1. Finely chop 10 ounces chocolate. Place in a small bowl.
  2. In a small saucepan, combine cream, pumpkin, and spices; heat just to a boil. Pour over chocolate; let stand for 5 minutes.
  3. Stir with a whisk until smooth. Cool to room temperature. Refrigerate, covered, at least 4 hours.
  4. Finely grate remaining chocolate; place in a small microwave-safe bowl. With hands dusted lightly with baking cocoa, shape chocolate mixture into 1-in. balls; roll in grated chocolate. (Mixture will be soft and truffles may flatten slightly upon standing).
  5. If desired, melt unused grated chocolate in a microwave and use to attach eyeballs.
  6. Store in an airtight container in the refrigerator.
  7. Enjoy!

To make these spiced chocolate monster truffles even more spooky and Halloween ready we added the cutest eye candies from Wilton. Make some with the traditional two eyes, others with three eyes and last but not least make some of the truffles with one eye. Either one you choose, you’ll love them all. They are melt in your mouth-good!

Mummy Meringue Pops

Nothing says Halloween like candies, mummies, witches, black cats, and the occasional spider web decor. Maybe I’m missing something or a lot but at the end of the day do Halloween however you wish. We made some cute and delicious mummy meringue pops to start our #HalloweenTreatsWeek. This post and recipe was created for #HalloweenTreatsWeek! I was sent samples by some of the sponsor companies but as always opinions are 100% mine.

For the past decade or longer we have been celebrating what we call “Mandy Night”, which is movie and candy night while the neighborhood kids are out collecting candy door to door. Every year we plan out the movies we’ll see and the candies we’ll consume. It’s all sorts of fun and the girls love it! You can read more about our “mandy night” palooza here. In the meantime, grab the recipe for our Mummy Meringue Pops and have a party with your kids!

Mummy Meringue Pops

Yield: 10-12 pops
Prep Time: 25 minutes
Cook Time: 1 hour
Passive Time: 2 hours
Total Time: 3 hours 25 minutes

Nothing says Halloween like mummies and we got some delicious ones for you, they melt in your mouth. Have you seen cuter Mummy Meringue Pops?

Ingredients

  • 1/4 cup Meringue Powder, (from Wilton)
  • 1/42 cup Ice Cold Water
  • 1 cup Sugar, (we used Dixie Crystals)
  • White Chocolate Candy Melts, (from Wilton)
  • Candy eyes, (from Wilton)
  • Paper Straws, (from Sweets and Treats)

Instructions

  1. Heat the oven to 250 degrees.
  2. Begin making your meringue pops by adding the meringue mix and the cold water into a mixing bowl.
  3. Using a stand mixer or hand mixer, whip the water and meringue mix on high speed until the consistency is light and fluffy, about 10 minutes. The mix should start to form stiff peaks.
  4. Line a baking sheet with parchment paper. Place paper straws with 3-4 inches apart. Using a decorating bag and a 1M tip pipe the meringue mix going back and forth, left to right until you reach just above half-way down the straw.
  5. Bake in the oven for 1 hour, then turn off the oven and let the meringues cool in the oven for about 2 hours.
  6. Once the meringues have fully cooled, melt the white candy melts in the microwave in 30-second intervals until fully melted.
  7. Place the candy eyes in place. Drizzle white candy melts over the meringue pops and under the eyes to keep in place.
  8. Let cool completely. Enjoy!

Meringue pops are super easy to make and can be customized into any theme of your choice. Think birthday parties, baby showers, weddings, and any holiday of your choice. We are in love with the way our mummy meringue pops turned out. They are super cute and not at all creepy!

We used meringue powder, candy eyes and white candy melts from Wilton, sugar from Dixie Crystals and paper straws from Sweets & Treats.

6 ways your garden could be saving you money

Those with green thumbs will know just how amazing the garden is. It takes great skill and care to nurse a plant from a dwindling seed to full bloom. In summer, the garden is your sanctuary, and a great place to lounge while you read a book under the sun.

However, have you ever thought about using your gardening and DIY skills to earn a little extra money on the side and save on household bills? Here are six ways your garden could actually be saving you money, as well as the planet.

  1. Grow plants and vegetables

We eat vegetables every day, so why do so many people buy them from the supermarket? A much more cost-effective solution is to grow your own vegetables in your garden. It’s great fun, and seeing the effort that goes into growing the food will make you appreciate it more.

Best of all, you’ll be reducing the size of your carbon footprint by growing organic products made without pesticides or artificial fertilizers.

  1. Invest in chickens

If you love having omelets for breakfast, then you might benefit from having your very own garden chickens. The initial set up for the cage and chickens is quite pricey, but it’s worth it in the end when you have an abundance of free eggs. Best of all, you’ll have your very own free-range chickens that aren’t cooped up in battery farms.

  1. Keep the kids entertained

Kids are into everything and it can become particularly difficult to keep them entertained for an extended period of time. You might be dreading the next half term, worried about how much the cinema trips and theme park visits are going to cost you. Have you ever considered introducing the kids to gardening? It will keep them intrigued for hours on end and also breed the next generation of sustainable gardeners.

Salted Caramel Pumpkin Ice Cream

Making ice cream at home is easier than many think. We got an ice cream machine years ago and believe it was one of the best investments we ever did. Homemade salted caramel pumpkin ice cream hits all the Fall notes and then some. We can’t resist the smell of pumpkin spices all over the kitchen. It’s the perfect way to remind yourself that a new season is approaching. I received product samples from sponsor companies to aid in the creation of the #PumpkinWeek recipes. All opinions are mine alone.

We added a creamy pumpkin pie sauce from Torani into the ice cream while it was churning and it was the best thing we did! It brings the pumpkin flavor to a whole nother level. Talking about sauces, who doesn’t love a good sauce over their ice cream, right? We made a salted caramel sauce that will leave you wanting to top everything with it! Go ahead, we won’t judge. Enough about what we did, here’s the recipe so you can make your own salted caramel pumpkin ice cream and eat it too! (wink) Call a friend over and enjoy Fall with a scoop or two of these amazing ice cream.

Salted Caramel Pumpkin Ice Cream

Yield: 1-1/2 quarts ice cream
Cook Time: 30 minutes
Passive Time: 4 hours
Total Time: 4 hours 30 minutes

Everyone loves a pumpkin-flavored cheesecake, so we decided to make a cool and creamy salted caramel pumpkin ice cream. We're thrilled with the results.

Ingredients

Pumpkin Ice Cream

  • 2 cups Heavy Whipping Cream, separate according to directions
  • 1 (8oz) Cream Cheese, cubed
  • 3/4 cups Brown Sugar, packed, separate according to directions (we used Dixie Crystals)
  • 5 large Egg Yolks
  • 1 teaspoon Salt
  • 1 1/2 teaspoons Ground Pumpkin Spice
  • 1 cup Pumpkin Puree, canned
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Pumpkin Pie Sauce, (we used Torani)

Salted Caramel Sauce

  • 1 cup Sugar, (we used Dixie Crystals)
  • 1/4 cup Water
  • 1/2 cup Heavy Whipping Cream
  • 1/2 teaspoon Vanilla Extract
  • 1/2 teaspoon Sea Salt

Instructions

Pumpkin Ice Cream

  1. Meanwhile, in a small bowl, whisk the egg yolks, salt, spices and the remaining cream and brown sugar.
  2. Whisk a small amount of hot mixture into the egg mixture. Keep on adding until half the heavy cream mixture is combined into the egg mixture. Return all to the pan, whisking constantly.
  3. Cook and stir over low heat until mixture is thickened and coats the back of a spoon.
  4. Quickly strain through a fine-mesh sieve into a bowl; place in ice water and stir for 2 minutes. Whisk in pumpkin and vanilla. Continue to whisk until completely cooled.
  5. Fill cylinder of ice cream freezer two-thirds full. Drizzle in pumpkin sauce (this step is optional). Freeze according to the manufacturer’s directions.
  6. When ice cream is frozen, transfer to a freezer container; freeze for 2-4 hours before serving.

Salted Caramel Sauce

  1. Increase the heat to medium-high. Swirl the pan periodically to prevent burning but don't stir it.
  2. Cook until the syrup is deep amber color (but be careful, if it gets too dark it will become bitter). Depending on how hot your burner is, this could take 8-15 minutes. Remove from the heat. Tip: I keep in on the lower heat option, it may take longer, but it keeps it from burning on me.
  3. Slowly add the cream. Be careful! It will bubble up like crazy and you will mildly panic, so only add a tiny bit at first. Once the mixture cools down a little bit it will stop bubbling so much.
  4. Return to low heat and stir in the vanilla and salt. Stir until the caramel is smooth.
  5. Let it cool off the heat for a few minutes before tasting and adjusting vanilla or salt.
  6. Drizzle over your Pumpkin Ice Cream as desired. Enjoy!

Pumpkin Waffles with Orange Cream Cheese

Breakfast and brunch have to be the best meals of the day. We are hitting a home run with pumpkin waffles with an orange cream cheese to go over. Take out your maple syrup because we are bringing pumpkin waffles over. I received product samples from sponsor companies to aid in the creation of the #PumpkinWeek recipes. Nothing says brunch like homemade pumpkin waffles, at least not during Fall season. Put on the coffee pot and get all the ingredients out. You’ll have pumpkin waffles on the table before you know it. We love making the orange cream cheese mixture the day before (or night); leaving extra room for waffle palooza. Trust us when we say, you’ll love every bite!

Pumpkin Waffles with Orange Cream Cheese

Yield: 4
Cook Time: 25 minutes
Total Time: 25 minutes

Pumpkin waffles with orange cream cheese have Fall written all over them! They are crunchy, creamy, and are perfect with a drizzle of maple syrup.

Ingredients

Orange Cream Cheese

  • 1/24 ounces Cream Cheese, softened
  • 2 tablespoons Powder Sugar, (we used Dixie Crystals)
  • 1 tablespoon Grated Orange Zest
  • Pepitas, optional

Pumpkin Waffles

  • 1 cups + 2 tablespoons All Purpose Flour
  • 2 tablespoons Brown Sugar, (we used Dixie Crystals)
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Baking Powder
  • 14 teaspoon Baking Soda
  • 2 large Eggs
  • 1 cup Milk
  • 1/2 cup Pumpkin, canned
  • 2 tablespoons Butter, melted
  • Pure Maple Syrup
  • Pumpkin Pie Sauce, (we used Torani)
  • Powder Sugar, optional (we used Dixie Crystals)

Instructions

Orange Cream Cheese

Pumpkin Waffles

  1. Whisk together the dry ingredients )first six waffle ingredients).
  2. In another bowl, whisk together eggs, milk, pumpkin and melted butter; add to dry ingredients. Stir just until well combined.
  3. Cook waffles according to manufacturer’s directions until golden brown. Serve with orange cream cheese mixture, pepitas (optional) and syrup.

Pumpkin spice and everything nice! Fall is in the air and pumpkin spice flavors are everywhere. We couldn’t stop at that so we made the best pumpkin bread you’ve ever tasted because it has a secret ingredient, yes, a secret ingredient we’re sharing with you. Take a look at the recipe below. You don’t have to wait, just go, take a look and then come back to the reading I’ll wait! Mini Pumpkin Spice Trifles is the best treat or dessert for entertaining or just to grab on any given afternoon. Trifles are perfect for small to large gatherings. They make any dessert table prettier. And they are especially perfect as a treat or snack after a long day. Make them ahead of time and grab as the week goes by. The kids love it delicious creamy filling that is layered in-between the pumpkin spice bread. Grab the recipe below, I want you to make them and experience the magic. Trust me, you haven’t had trifles like these ones.

Mini Pumpkin Spice Trifles

Yield: 8 servings
Prep Time: 40 minutes
Cook Time: 20 minutes
Total Time: 1 hour

These miniature trifles are so much fun to make! Fall in every bite makes any gathering or afternoon a true treat. Mini Pumpkin Spice Trifles for the win!

Ingredients

Pumpkin Spice Cake

  • 1 cup All Purpose Flour
  • 1 tablespoon Instant Espresso Powder
  • 1 teaspoon Baking Powder
  • 1 1/2 teaspoon Ground Pumpkin Spice
  • 1/2 teaspoon Baking Soda
  • 1 cup Pumpkin, canned
  • 3/4 cups Sugar, (we used Dixie Crystals)
  • 1/2 cup Canola Oil
  • 1 large Eggs, room temperature

Cream Cheese Filling

  • 6 ounces Cream Cheese, softened
  • 1/4 cup Butter, softened
  • 1 teaspoon Vanilla Extract
  • 2 3/4 cups Powder Sugar, (we used Dixie Crystals)
  • Pepitas Seeds, optional
  • Cool Whipped Topping, optional

Instructions

Pumpkin Spice Cake

  1. Whisk together dry ingredients (the first 8 ingredients).
  2. In another bowl, beat pumpkin, sugar and oil until smooth; add eggs, one at a time, beating well after each addition.
  3. Gradually add flour mixture; beat until well blended.
  4. Line a 9-in. square baking pan with parchment; grease paper. Pour in batter.
  5. Bake for 15-20 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack. Remove from pan; cool completely on wire rack.

Cream Cheese Filling

Assembling

  1. Assemble 8 glasses or small parfait jars. Alternate layers of cake and filling, ending with filling. If desired, scoop some whipped cream, pepitas and ground pumpkin spice.

Chorizo Sausage and Caramelized Onion Mini Quiche

Busy days requires grab-and-go breakfasts. With school season soon approaching we’re all looking for easy treats, snacks and meals to make. Chorizo, sausage caramelized onion mini quiche makes the perfect grab-and-go breakfast and it’s also super kid friendly. Make these chorizo, sausage caramelized onion mini quiches ahead of time and warm as needed. They freeze beautifully. This recipe makes 18 mini quiches, which are regular muffin/cupcake size.

These mini quiches have become my go-to breakfast, snack and even lunch on occasions. Specially during those busy days when there’s little time for complicated cooking. If a quick salad is what you’re looking for just add a selection of greens to a plate and enjoy! Grab the recipe. Once you find out how easy they are to make you’ll be surprise you haven’t made them before.

Chorizo Sausage and Caramelized Onion Mini Quiche

Yield: 18
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

Chorizo Sausage and Caramelized Onion Mini Quiche are easy to put together and makes great #backtoschooltreats your kids will love! Grab and go breakfast for those busy days!

Ingredients

  • 2 sheets Puff Pastry, thawed, cut each into 9 equal pieces
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 dried Chorizo, thinly sliced
  • 3 links Mild Sausage
  • 4 Eggs
  • 1/2 cup Half and Half
  • 1/2 cup Milk
  • 1/2 cup Parmesan cheese, grated
  • Sea Salt
  • Cracked Black Peppers
  • 1/3 cup Fresh Ricotta
  • 1/4 cup Caramelized Onion, homemade or storebought

Instructions

  1. Heat oven to 350 degrees.
  2. Lightly grease 12 capacity muffin tins with oil.
  3. Cut the pastry into 9 equal pieces and press into the prepared tins. Set aside.
  4. To make the filling, heat the oil in a large, non-stick frying pan over medium heat.
  5. Cook the sausage link into small pieces for about 2-3 minutes until it's no longer pink. Remove from the pan and place on a plate with paper towels to drain any liquid.
  6. Add chorizo and cook for 2 minutes, keeping an eye on it so it wont burn on you. Set aside to drain on a paper towel.
  7. Place the eggs, cream, milk, parmesan, salt, and pepper in a medium bowl and whisk to combine.
  8. Spoon ricotta and caramelized onion inside the pastry cups. Top with chorizo and sausage. Divide evenly into the 18 muffin tins.
  9. Pour over the egg mixture and bake for 35-40 minutes or until cooked through.

Are you a pie lover? With summer still here we have lots of fresh fruits available to us. If you’re looking for an idea to use up those fruits you either have in your fridge or see in all the markets you step in I’ve got you covered. Berries Vanilla Pies are tangy, creamy and the crust is all sorts of delicious. Makes for the perfect back to school treat. We’ve been school shopping all week long. You probably have too. Have you noticed that some of the items on your kids school lists they may not be using at all? We have coloring pencils in our list and unless your kids are in an art class they may not be using them at all. One of our girls will be using them and then some. She loves art and enrolled in an art class. What’s on your school list that you may not be getting, or at least not yet?

One thing I know for sure is that this berries vanilla pies are on your list and you must give the recipe a try. It’s super easy to make and perfect topped with a scoop of vanilla ice cream.

Berries Vanilla Pies

Yield: 6 pies
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

Berries vanilla pies are best when topped with an ice cream scoop! Summer taste in each bite! Creamy, crunchy and tangy filled with berries.

Ingredients

  • 1 cup Strawberries, cut into pieces
  • 2/3 cups Blueberries
  • 2/3 cups Raspberries
  • 1 tablespoon Cornstarch
  • 1/4 cup Sugar, we used Dixie Crystals
  • 1 teaspoon Vanilla Paste, we used Vanilla Paste from Taylor & Colledge
  • 4 sheets Frozen Shortcrust Pastry, thawed
  • 1 Egg, lightly beaten
  • 2 tablespoons Raw Sugar
  • Vanilla Ice Cream, to serve

Instructions

  1. Heat oven to 350 degrees.
  2. Place the berries, cornstarch, sugar and vanilla paste in a small bowl and mix to combine. Set aside.
  3. Cut out 6x11cm rounds from the pastry and use to line the bases of a lightly greased 1/2 cup capacity (6 hole muffin tin).
  4. Divide the filling between the pastry cases.
  5. Cut strips from the remaining pastry.
  6. Brush the edges of the larger pastry rounds with egg and layer the strips crossing them across one another. Press the edges together to seal.
  7. Brush the tops with egg and sprinkle with raw sugar.
  8. Bake for 25-30 minutes or until golden brown and pastry is cooked through.
  9. Serve with ice cream and enjoy!

After a long day all we want is a treat or a snack. I know we do and we always gravitate towards something chocolaty and indulgent. We can’t just eat and not share, so here’s our Brownie Cookies filled with Mascarpone Frosting. Back to school couldn’t get any sweeter. We love a sweet treat after a long day and so does our kiddos. We have made some of the most decadent brownie cookies you could ever have and need I say more about this mascarpone frosting? It’s creamy and perfection in every bite! Grab the recipe below, make them as soon as possible and you’ll find yourself wanting to make a second batch sooner than later. Trust me, they are that good!

Brownie Cookies with Mascarpone Frosting

Yield: 12 servings

Brownie cookies with mascarpone frosting are decadent and a treat in every bite. Make a batch and enjoy with a hot cup of coffee or a tall glass of milk!

Ingredients

Brownie Cookies

  • 2 cups Dark Chocolate, chopped
  • 2 tablespoons Butter
  • 2 Eggs
  • 2/3 cups Sugar, we used Dixie Crystals
  • 1 teaspoon Vanilla Paste, we used Vanilla Bean Paste from Taylor & Colledge
  • 1/4 cup All Purpose Flour, sifted
  • 1/4 teaspoon Baking Powder, sifted

Mascarpone Frosting

  • 8 oz Mascarpone, softened
  • 1-2 tablespoons Powdered Sugar, we used Dixie Crystals
  • 1/2 cup Heavy Cream

Instructions

Brownie Cookies

  1. Place 1 cup + 1/8 cup of the chocolate and the butter in a small saucepan over low heat and stir until melted and smooth. Set aside.
  2. Place the eggs, sugar, and vanilla in the bowl of an electric mixer and whisk until pale and creamy.
  3. Stir through the flour, baking powder, chocolate mixture, and remaining chocolate. Allow to stand for 10 minutes.
  4. Scoop tablespoonfuls of the mixture onto baking trays lined with non-stick baking paper.
  5. Bake for 8-10 minutes or until puffed and cracked. Allow to cool completely on trays.

Mascarpone Frosting

  1. Add cream and beat until firm.
  2. Spread half the cookies with the mascarpone frosting and sandwich with the remaining cookies.
  3. Enjoy!

This upcoming back to school season is filled with mix feelings. Both of our girls are graduating. One from high school and the other from middle school. You guys, I’m going to be a wreck. Some tears will be filled with joy and others with a sense of “time goes by way too fast”. At the end of it all, I’m proud of them and the lessons learned throughout the years. Back to school is approaching whether we are ready or not and with it lots of new experiences and changes. We’re ready for them! Bring it on!

Peaches and Maple Crunch Breakfast Jars

Back to school is about to start and easy grab-and-go breakfasts are a must. We can’t get enough of these peaches and maple crunch breakfast jars. Some product samples were received from sponsor companies to aid in the creation of the #BacktoSchoolTreats week recipes. All opinions are mine alone.

Grilled peaches reminds us that summer is not over, but the truth is that school is right around the corner weather we are ready for it or not. Have you been school shopping yet? We have started. The girls saw some shoes they liked and we ordered them online. Next are the backpacks. Once we get the school lists we are heading into some stores. But one thing we know for sure and that is that having some easy recipes handy is a must. Here is my take on an easy breakfast for on-the-go mornings.

Peaches and Maple Crunch Breakfast Jars

Yield: 6 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Back to school means planning easy on-the-go breakfast that not only travels well but are good for your kids. We can't get enough of these peaches and maple crunch breakfast severed in jars, easy grab-and-go. Making our #backtoschool routine an easy one!

Ingredients

  • 3 cups Peaches, halves and grilled
  • 1 cup Rolled Oats, we used Flahavan's Irish Rolled Oats Quick Oatmeal
  • 1/2 cup Almonds, sliced or roughly cut
  • 1/4 cup Pepitas Seeds
  • 1/2 teaspoon Vanilla Paste, we used Taylor & Colledge Organic Vanilla Bean Paste with seeds
  • 1/2 cup Maple Syrup
  • Greek Yogurt, to serve

Instructions

  1. Heat oven to 355°F.
  2. Cut peaches in half. Place on the grill (we used an indoor grill) and grill for about 5 minutes or until marks are noticeable.
  3. Place the oats, almonds, pepita seeds and salt in a medium bowl. Add the maple syrup, vanilla paste and toss to combine. Place on a baking tray lined with non-stick baking paper and bake for 10 minutes, toss and bake for an additional 5 minutes until golden and crisp. Let is cool for about 10 minutes.
  4. Divide the peaches between glasses or jars and top with yogurt and the maple crunch to serve.

Nothing brings out the juices of a good peach like the grill. We love to enjoy them warm with a few spoonfuls of Greek yogurt. Top with homemade maple almond and pepita granola and you’ll have the best peaches and maple crunch breakfast you’ve ever had.
