Are you a pie lover? With summer still here we have lots of fresh fruits available to us. If you’re looking for an idea to use up those fruits you either have in your fridge or see in all the markets you step in I’ve got you covered. Berries Vanilla Pies are tangy, creamy and the crust is all sorts of delicious. Makes for the perfect back to school treat. We’ve been school shopping all week long. You probably have too. Have you noticed that some of the items on your kids school lists they may not be using at all? We have coloring pencils in our list and unless your kids are in an art class they may not be using them at all. One of our girls will be using them and then some. She loves art and enrolled in an art class. What’s on your school list that you may not be getting, or at least not yet?
One thing I know for sure is that this berries vanilla pies are on your list and you must give the recipe a try. It’s super easy to make and perfect topped with a scoop of vanilla ice cream.
- 1 cup Strawberries, cut into pieces
- 2/3 cups Blueberries
- 2/3 cups Raspberries
- 1 tablespoon Cornstarch
- 1/4 cup Sugar, we used Dixie Crystals
- 1 teaspoon Vanilla Paste, we used Vanilla Paste from Taylor & Colledge
- 4 sheets Frozen Shortcrust Pastry, thawed
- 1 Egg, lightly beaten
- 2 tablespoons Raw Sugar
- Vanilla Ice Cream, to serve
- Heat oven to 350 degrees.
- Place the berries, cornstarch, sugar and vanilla paste in a small bowl and mix to combine. Set aside.
- Cut out 6x11cm rounds from the pastry and use to line the bases of a lightly greased 1/2 cup capacity (6 hole muffin tin).
- Divide the filling between the pastry cases.
- Cut strips from the remaining pastry.
- Brush the edges of the larger pastry rounds with egg and layer the strips crossing them across one another. Press the edges together to seal.
- Brush the tops with egg and sprinkle with raw sugar.
- Bake for 25-30 minutes or until golden brown and pastry is cooked through.
- Serve with ice cream and enjoy!
