Busy days requires grab-and-go breakfasts. With school season soon approaching we’re all looking for easy treats, snacks and meals to make. Chorizo, sausage caramelized onion mini quiche makes the perfect grab-and-go breakfast and it’s also super kid friendly. Make these chorizo, sausage caramelized onion mini quiches ahead of time and warm as needed. They freeze beautifully. This recipe makes 18 mini quiches, which are regular muffin/cupcake size.
These mini quiches have become my go-to breakfast, snack and even lunch on occasions. Specially during those busy days when there’s little time for complicated cooking. If a quick salad is what you’re looking for just add a selection of greens to a plate and enjoy! Grab the recipe. Once you find out how easy they are to make you’ll be surprise you haven’t made them before.
- 2 sheets Puff Pastry, thawed, cut each into 9 equal pieces
- 1 tablespoon Extra Virgin Olive Oil
- 1 dried Chorizo, thinly sliced
- 3 links Mild Sausage
- 4 Eggs
- 1/2 cup Half and Half
- 1/2 cup Milk
- 1/2 cup Parmesan cheese, grated
- Sea Salt
- Cracked Black Peppers
- 1/3 cup Fresh Ricotta
- 1/4 cup Caramelized Onion, homemade or storebought
- Heat oven to 350 degrees.
- Lightly grease 12 capacity muffin tins with oil.
- Cut the pastry into 9 equal pieces and press into the prepared tins. Set aside.
- To make the filling, heat the oil in a large, non-stick frying pan over medium heat.
- Cook the sausage link into small pieces for about 2-3 minutes until it's no longer pink. Remove from the pan and place on a plate with paper towels to drain any liquid.
- Add chorizo and cook for 2 minutes, keeping an eye on it so it wont burn on you. Set aside to drain on a paper towel.
- Place the eggs, cream, milk, parmesan, salt, and pepper in a medium bowl and whisk to combine.
- Spoon ricotta and caramelized onion inside the pastry cups. Top with chorizo and sausage. Divide evenly into the 18 muffin tins.
- Pour over the egg mixture and bake for 35-40 minutes or until cooked through.
