Make them ahead of time and grab as the week goes by. The kids love it delicious creamy filling that is layered in-between the pumpkin spice bread. Mini Pumpkin Spice Trifles

Cook Time: 20 minutes

These miniature trifles are so much fun to make! Fall in every bite makes any gathering or afternoon a true treat. Mini Pumpkin Spice Trifles for the win!

Ingredients

Pumpkin Spice Cake

  • 1 cup All Purpose Flour
  • 1 tablespoon Instant Espresso Powder
  • 1 teaspoon Baking Powder
  • 1 1/2 teaspoon Ground Pumpkin Spice
  • 1/2 teaspoon Baking Soda
  • 1 cup Pumpkin, canned
  • 3/4 cups Sugar, (we used Dixie Crystals)
  • 1/2 cup Canola Oil
  • 1 large Eggs, room temperature

Cream Cheese Filling

  • 6 ounces Cream Cheese, softened
  • 1/4 cup Butter, softened
  • 1 teaspoon Vanilla Extract
  • 2 3/4 cups Powder Sugar, (we used Dixie Crystals)
  • Pepitas Seeds, optional
  • Cool Whipped Topping, optional

Instructions

Pumpkin Spice Cake

  1. Whisk together dry ingredients (the first 8 ingredients).
  2. In another bowl, beat pumpkin, sugar and oil until smooth; add eggs, one at a time, beating well after each addition.
  3. Gradually add flour mixture; beat until well blended.
  4. Line a 9-in. square baking pan with parchment; grease paper. Pour in batter.
  5. Bake for 15-20 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack. Remove from pan; cool completely on wire rack.

Cream Cheese Filling

Assembling

  1. Assemble 8 glasses or small parfait jars. Alternate layers of cake and filling, ending with filling. If desired, scoop some whipped cream, pepitas and ground pumpkin spice.
