Back to school is about to start and easy grab-and-go breakfasts are a must. We can’t get enough of these peaches and maple crunch breakfast jars. Some product samples were received from sponsor companies to aid in the creation of the #BacktoSchoolTreats week recipes. All opinions are mine alone.
Grilled peaches reminds us that summer is not over, but the truth is that school is right around the corner weather we are ready for it or not. Have you been school shopping yet? We have started. The girls saw some shoes they liked and we ordered them online. Next are the backpacks. Once we get the school lists we are heading into some stores. But one thing we know for sure and that is that having some easy recipes handy is a must. Here is my take on an easy breakfast for on-the-go mornings.
- 3 cups Peaches, halves and grilled
- 1 cup Rolled Oats, we used Flahavan's Irish Rolled Oats Quick Oatmeal
- 1/2 cup Almonds, sliced or roughly cut
- 1/4 cup Pepitas Seeds
- 1/2 teaspoon Vanilla Paste, we used Taylor & Colledge Organic Vanilla Bean Paste with seeds
- 1/2 cup Maple Syrup
- Greek Yogurt, to serve
- Heat oven to 355°F.
- Cut peaches in half. Place on the grill (we used an indoor grill) and grill for about 5 minutes or until marks are noticeable.
- Place the oats, almonds, pepita seeds and salt in a medium bowl. Add the maple syrup, vanilla paste and toss to combine. Place on a baking tray lined with non-stick baking paper and bake for 10 minutes, toss and bake for an additional 5 minutes until golden and crisp. Let is cool for about 10 minutes.
- Divide the peaches between glasses or jars and top with yogurt and the maple crunch to serve.
Nothing brings out the juices of a good peach like the grill. We love to enjoy them warm with a few spoonfuls of Greek yogurt. Top with homemade maple almond and pepita granola and you’ll have the best peaches and maple crunch breakfast you’ve ever had.
