We are a brunch loving family. It’s that meal of the day that you tend to eat on lazy days. We get up later than usual and make breakfast items that are a favorite to each one of us individually. For example, my husband loves pancakes, my girls are a big fan of scramble eggs (made by their daddy and I don’t complain at all), and I love french toast and muffins (specially blueberry muffins).

French toast is that item that is not only bread, but a bread soaked in a milk (or buttermilk), eggs, cinnamon and some vanilla extract mixture. French toast is like the toast and pancake’s cousin.

Triple-Stuffed-French-Toast

After making so many french toast on pasts brunches I thought it could be fun to make a twist to them and stuffed them with our favorite ingredients. While looking around the fridge and pantry for things to use I happened to find some ingredients that we enjoy alone or combined. Strawberry and cream cheese. Combined they are sweet, fresh and loved by all of us, like a strawberry and shortcake. Who doesn’t love that?

This is also a great idea if you happen to have a favorite jam flavor.  Imagine how great it could taste with some fresh strawberries added in there too! Ideas are flowing through. Love brunch menus!

Strawberry and Cream Cheese Stuffed French Toast

{Triple Stuffed French Toast}

(Recipe by Wanda Lopez, My Sweet Zepol)

Ingredients:

1 loaf of Cinnamon Swirl Bread (cut into 1inch thick slices)

1/4 cup Yogurt (with vanilla)

1/4 cup Whipped Cream Cheese

1/2 cup Strawberry Jam

1 1/2 cups Milk

3 large Eggs

1/8 teaspoon Ground Nutmeg

1/8 teaspoon Vanilla Extract

4 tablespoons Butter (or as needed)

Directions

Combine yogurt and  cream cheese. Set aside.

Whisk the milk, eggs, nutmeg and vanilla together; pour into a large shallow dish.

Preheat a large pan on medium heat, place butter on pan (about 1/2 tablespoon at a time or as needed for size of pan).

Soak 3 bread slices in egg mixture for a couple of seconds. Place in the pan and cook for about 2-3 minutes per side, until golden. Remove from the pan and cover to keep warm until all your bread is done.

Spread 1 tablespoon of cream cheese mixture on one of the french toasts and strawberry jam on another french toast.

Start assembling with toast that has the cream cheese mixture, then follow with one plain french toast and top with the french toast that has the strawberry jam.

Repeat with remaining bread, serve and enjoy!

Tip: Good side dishes are scramble eggs, omelet, eggs benedict,  hash brown, or breakfast potatoes.
