Cupcakes or Muffins?

Most people think that blueberries are for muffins and not intended for cupcakes or that after baked they taste more like muffins than cupcakes. This is sometimes true. Yeah, you read right, sometimes.

I have researched for a great recipe and came upon a couple good ones. Some had comments in it and most people commented that after baking they turned out to look like muffins and that they shouldn’t be considered cupcakes.

After baking a couple of those blueberry recipes I came up with one I liked a lot, and I want to share it with you. Sometimes baking (or cooking) feels like doing surgery, you tweak and make changes with ingredients that work better for you and your family. This blueberry cupcakes that I want to share with you are moist and have a nice hint of lemon given by the lemon zest that makes this the very best blueberry cupcakes ever!

Blueberry Cupcakes

3 1/4 cups all purpose flour
1 1/4 cups sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
6 tablespoons unsalted butter (softened)
1/4 cup canola oil
2 large eggs
1 cup buttermilk or low-fat yogurt
1 teaspoon vanilla extract
1 teaspoon grated lemon peel
1 1/4 cups fresh blueberries (thawed, frozen blueberries will work just fine too)

Direction:

Preheat oven to 350°F.

Sift flour, 1 cup of sugar,  baking powder, salt and baking soda and set aside.

Whisk butter and sugar until fluffy then and oil. Then add eggs; one at a time.

In a separate bowl add in buttermilk, vanilla extract, and peel.

Finally add buttermilk mixture to dry ingredients; whisk just incorporate. Stir in blueberries. Don’t over mix.

Divide batter among cupcake liners. Bake cupcakes about 15-20 minutes or until tester comes out clean.

Note: Remember that not all ovens work the same way, so keep an eye to the baking time of your oven.

Bluebery Muffins

 

For the frosting, go with your favorite. Cream Cheese frosting goes perfect with blueberries and that’s what I went with. Blueberry, a hint of lemon (given by the lemon zest) and cream cheese is such a wonderful combination. All the flavors work well together, go on and try it!

Cream Cheese Frosting

1 package of cream cheese, softened
1/2 cup butter, softened
4 cups confectioners sugar
1/2 tsp vanilla (optional)

Directions

Mix softened cream cheese and butter together until smooth and creamy, gradually add the confectioners sugar and end with vanilla.

Note: Some people add milk to there frosting to make it creamy. I don’t do it to this recipe, but if you wish to just add a teaspoon at a time and make it your own. Remember that they are meant for you to enjoy and love. Changing a recipe is what makes them unique and perfect for you.
