Spring is here, at least for some of us. Some states are still being hit with inches of snow. I miss that part of the season. But, my husband doesn’t miss it at all. Hope that Spring starts blooming on the snowy states and give the surroundings some color. That is where this post comes into place. I am giving you all some color!!!!

This granola is a Spring inspired one with beautiful colors, perfect for Easter! And Easter is just around the corner. Making granola is so easy and this recipe can be changed. Everything from the nuts, dried fruits and even sweets can be altered for those of your liking.

Snack on some homemade granola and watch Spring move in.

Easter Granola

(Recipe by Wanda Lopez, My Sweet Zepol)

Ingredients

1 cup of Honey

3 tablespoons Coconut Oil

1 teaspoon Vanilla Extract

2 cups Old Fashion Oatmeal

1/2 cup Almonds

1/2 cup Sunflower Seeds

1/2 cup Pecans

1/2 cup Pumpkin Seeds

1/2 cup Dry Pomegranate

1 cup Mini M&M

Directions

Preheat the oven at 325 degrees

Grease a baking sheet and set aside.

Simmer at low heat the honey and coconut oil, (stirring constantly) once it has simmered turn off the heat and add vanilla. Set aside.

Mix the oats and nuts in a large bowl. Then add the honey mixture and coat evenly.

Spread the granola evenly in a large baking sheet.

Bake for about 20 minutes or until golden brown. Around half way the baking time (about 10 minutes) add the dry fruit.

Remove from oven and let cool completely.

Once cool add the mini M&M’s and mix well.
