My friends are introducing a low-carbs diet into their lifestyle. It makes me very happy to see them enjoying the process and already feeling the change, in a good way. This has opened a new door for me as well. Now I get to experiment with low-carbs recipes and make them our own. Like these flourless PB dark chocolate cookies!
The first recipe I played and tweaked was a flour-less peanut butter cookie recipe. I have tried a couple of variations and I want to share with you the one we (my kids and friends) unanimously loved!
Looking for a low-carb cookie? Here is a wonderful flourless peanut butter cookie dipped in dark chocolate. Only three ingredients! For a sugar free option substitute the brown sugar with three envelopes of Splenda (or your choice of sugar substitute). Preheat oven to 350 degrees. In a medium bowl mix all the ingredients together until well combined. Using a small ice cream scoop (or 1 tablespoon) place cookie about 1 inch apart onto a baking sheet. Flatten the mounds with the back of a fork, making a crosshatch pattern on the cookies. Bake for 10-12 minutes or until golden around the edges. Remove from the oven and cool completely. In the meantime melt about one cup of dark chocolate in the microwave in 30 seconds intervals. Once or twice will do. Carefully dip cookies halfway into the melted chocolate. Tip: I used a spoon to help me coat each cookie, they were very crumbly. Once you get a hand of it, it gets easier, promise.Flourless PB Cookies Dipped in Dark Chocolate
