Granola is easier to make than people imagine. I was one of those people. I thought granola was super complicated and it’s not. If you have honey and oats in your house you are half way there. Here is a granola mix my daughter put together one morning. We didn’t have all the items she loves, like almonds or chocolate chips, but we had pecans, cocoa nibs and cocoa powder. Work with what you have and you’ll be surprise with the results. Enjoy this honey pecan and cocoa granola recipe or give it as a gift!
She enjoys her granola on a bowl with milk or as a treat over vanilla Greek yogurt. The next day I went and got her some chocolate chunks and that brightened her granola bowl. I like it with yogurt as well and a load of fresh fruits like strawberries, blueberries or green apples. How do you enjoy granola mix? Maybe with more nuts as a trail mix?
Honey Pecan & Cocoa Granola
The perfect cocoa granola filled with honey pecans. A treat everyone will love as a treat or even a gift!
Ingredients
- 3 cups Old Fashioned Oats
- 1 cup Pecans
- 1/4 cup Flax Seeds
- 1/4 cup Chia Seeds
- 1/4 cup Cocoa Nibs
- 1/3 cup Honey
- 1/4 teaspoon Almond Extract, or Vanilla Extract
- 2 tablespoons Coconut Oil, melted
- Pinch of Sea Salt
- 1 teaspoon Cocoa Powder
Instructions
Preheat oven to 325 degrees.
Combine all the ingredients in a large bowl. Mix until all ingredients are completely coated with the honey and coconut oil.
Tip: This is a great job for kiddos to help with, incorporate your kids in the kitchen and you'll start noticing a higher appreciation for food and a sense of pride. They just made something with mamma (or daddy) in the kitchen!
Bake for 20-25 minutes or until granola is fragrant and golden brown.
Gently stir about halfway through the cooking time.
Let cool.
Notes
Store in airtight container. Store up to one week, but honestly it won't last that long.

I like to make granola as often as possible to snack on. It makes me feel like I am making better snacking choices and taking care of my body. Specially before Summer peeks-in and bathing suit season arrives or during the Holidays when I want to wear a cute LBD and want to feel lean and fit. My weight is like a yoyo and I am working hard on it. So I’m a yoyou too with my weight. If I bring stuff in the house that triggers me (crackers, chips etc) then I get in trouble. So I really try not to buy that stuff regularly, I save it for when I know it will be eaten as a group đŸ™‚
