While enjoying Spring Break with my girls we got together in the kitchen more often than any other week. It was a joy for me to be able to spend extra time with them creating memories. If you have kids I urge you to share memories in the kitchen with them, those are priceless moments that won’t be forgotten or taken for granted.

One of the meals we enjoy the most is breakfast. For us breakfast is not only for the morning, we have breakfast for dinner too, maybe way to often. Or just often enough!

Join us in the kitchen for some scrumptious pancakes with a black and white twist!

Oreo Pancakes
(recipe from My Sweet Zepol)

Ingredients
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup buttermilk
1 large egg
1 tablespoon oil (I use canola oil)
Oreo cookies (one per pancake)

Directions
Start by heating a pan of your preferred size at medium heat.
In a bowl mix the dry ingredients; flour, baking powder and salt.
In another bowl mix in buttermilk, egg and oil. Beat together lightly.
Pour the wet ingredients into the dry ingredients and mix until well combined.
Spray the pan with a non-stick pray or butter. The key is to have oil or butter to grease the pan.
Use a 1/3 cup (measuring cup) or an ice cream scoop to make your pancakes. This will help keep them all the same size.
Crumble an Oreo cookie on the pancake or just put it as is right in the center. Use as much or as less cookies as you desire for each pancake.
Once you see the pancake bubbling flip it to the other side and give it a minute or two before removing it from the pan.
Repeat the cooking process with all your batter. This recipe makes about 8 pancakes. Give or take!

You can top this pancakes with maple syrup or sugar glaze. The sky is really the limit when it comes to toppings. Have lots of fun making them and let me know how you liked them. Let me tell you that this pancakes are a hit in my house. The girls just love them!

Note: You can also use a pre-made pancake mix from a box if you wish.
