I needed an easy and fast meal to make this afternoon. But what to make? The girls were home from school and I had been running errands all day long. I did have some chicken breasts in the fridge. Months ago I came across a chicken recipe and after making it a couple of times and tweaking hear and there this is the adjustments I love the best. This Parmesan Crust Chicken is an easy chicken recipe. While its baking in the oven you can go ahead and make your side dish or dishes.
We paired this chicken dish with jasmine rice and a side of salad. Hope you try it soon and find it to be a great to go chicken recipe. We sure do! Some side options is a Cesar salad, loaded potatoes or even turning it into a pasta dish. So many possibilities.
Parmesan Crust Chicken
Ingredients
4 Chicken Breasts (in halves & boneless)
Salt
Pepper
1/3 cup Parmesan Cheese (grated)
1/2 cup Mayonnaise
about 10 Ritz Crackers (crushed)
Directions
Preheat oven to 425 degrees.
Prep a baking (cookie) sheet with oil or spray with cooking spray.
Season the chicken breasts with salt and pepper.
Coat the chicken with the grated Parmesan cheese and place on the baking sheet.
Top evenly with the mayonnaise.
Sprinkle the crushed Ritz crackers over the chicken (also evenly).
Bake for about 15 minutes.
Note: Keep and eye on your chicken as ovens tends to react differently. I baked them for 20 minutes and they came out good, but a little dry for my taste.
