Produce for Kids believes in creating a healthier generation and have been helping families and children by giving back since 2002. PFK’s continues to help families eat healthier with simple recipes & fresh ideas. In the United States, 1 in 7 people struggle with hunger. Since partnering with Feeding America® in 2015, Produce for Kids and our other partners have provided 7.8 million meals to families in need. Helping stop hunger is something I stand for and we can’t take for granted that it’s something families are going through right now.
Produce for Kids has once again join forces with Publix and Feeding America this summer to raise funds for local food banks located in the communities Publix serves. And that is the work I admire and want to be a part of. Don’t you? I know you do too. Here is a recipe, provided by Produce for Kids and a good one if I may say so myself.
Salsa Avocado Toast
Avocado toast makes a great breakfast or snack, especially when you’re short on time. Top with a fun salsa, scrambled eggs or fresh tomato slices for a new spin.
Ingredients
- 1/2 Yellow Bell Pepper, diced
- 1/2 small Tomato, diced
- 1/4 small Red Onion, diced
- 1 Lime, juiced
- 2 slices Whole Wheat Bread
- 1/2 cup Good Foods® Guacamole
Instructions
- Mix pepper, tomato, onion and lime juice in small bowl. Season with salt and pepper, to taste.
- Toast bread. Top with guacamole and salsa.
- Double or triple the recipe as needed.
- Enjoy!
When it comes to fresh produce, my go to place, is my local Publix. During this summer season not only can we enjoy fresh produce, but each purchase will make a difference for our local families. Your help counts too. By purchasing select local produce at your local Publix you will be automatically making a donation to Feeding America. Hurry, this opportunity to make a difference runs from May 30 through June 27. Keep a look out for the signage in the produce department.

YES!!!! I eat avocado toast all the time, but we just add a few diced tomatoes usually. I love the addition of salsa.
