Ingredients

  • 1 (18.25) box Vanilla Cake Mix
  • 1/2 cup Vegetable Oil
  • 2 Eggs
  • 1 cup White Chocolate Chips, I used Guittard Chocolate (glutten and nut free)
  • 3 regular size Candy Canes, crushed

Instructions

  1. Preheat the oven to 350 degrees. Line the baking sheet with parchment paper and set aside.
  2. In a large bowl combine the cake mix, oil and eggs. Stir until it is all mix well.
  3. Toss in the white chocolate chips
  4. Toss in the crushed candy canes.
  5. Give it a nice mix until the white chocolate chips and candy canes are well distributed.
  6. This recipe works best if you refrigerate the batter for about 15 minutes.
  7. Using a small ice cream scoop or spoon, scoop the dough onto the baking sheet.
  8. Leaving a space of about an inch from each cookie.
  9. Bake for 9-11 minutes, or until cookies are set. (For me 9 minutes was enough) Tip: you don't want them to brown.
  10. Once removed from the oven, let them rest for a couple of minutes (like 2 minutes) on the baking sheet before transferring them into a wire rack.
  11. Grab a glass of cold milk and enjoy!
