Meringue cookies are one of my all time favorite cookies. I admit that I’m a sucker for cookies with chocolates, but meringue cookies owns a special part of my heart.

They don’t require many ingredients, but they are kinda tricky. If the weather is humid they get soggy and inedible. But, when done with just the right weather they are crispy and sweet.
One of the things that I love most about meringue cookies is the many possibilities of colors I can use. I use a gel base food coloring, one of the ways to do it is by brushing lines of your color of choice inside a pastry bag and then adding the meringue. Or you can add some color to the meringue mixture and softly swirl to form some waves of colors. Be careful not to over mix.
Customize the colors according to the event you are baking them for.
Another recipe I made not long ago that completely loved is the Espresso Meringue Cookies, the touch of coffee made a big difference in this cookies. They were a hit in my house. I hope they become a hit in yours too.
Colors are not the only variation to this cookies, flavors are too. You can add any extract flavoring of your choice or mini chocolate chips and even some citrus zest. Those are just a few ideas of the many ways this cookies can be customized and made your very own favorite cookie of all times.
